PROGRAM OVERVIEW:
Jon Donaire Desserts (Rich Products) was established in 1979 and manufactures cheesecakes and mousse desserts. The facility makes fully finished desserts for major customers such as Walmart/Sams, Safeway, Kroger and Jack in the Box as well as smaller markets such as Trader Joes and Jenny Craig. The facility specializes in New York baked cheesecakes as well as creamstyle, it also manufactures its own non dairy toppings and mousse bases which are used for tiramisu and torte cakes. Recently, production has increased capacity by 10% and yield
by 2%. The two main drivers for these
improvements were reinventing how the facility is scheduled and implementing
the Machine Line Optimization (MLO) production system. Both these innovations continue to drive
performance year over year, which not only increased capacity by 10% but has
reduced labor by nearly 15%.

ABOUT THE SPEAKER:
With over 25 years’ experience in the food industry, Tony Del Duca has a wide array of knowledge throughout the industry, from aseptic creamers to High Temperature Short Time processing to fully finished desserts. Tony began his career with Rich Products, Corp. for Jon Donaire Desserts in 1988 in the ice cream division. Over the next 8 years he helped build the business from 300,000 cases annually to over 1.25 million. This was done through innovations such as individual desserts, ice cream pies, and multilayered cakes and fully finished decorated round and ¼ sheet cakes.
In 2007, Tony accepted the position of plant manager for a non dairy toppings and icings facility owned by Rich Products Corp. in the city of Claremont. With his history and knowledge of toppings and processing, Tony was able to restructure their mixing and processing procedures which increased capacity by over 15% as well as increasing yield by 7%. At this time Tony currently holds the role of plant manager for Jon Donaire Desserts in the cheesecake division. | ![]() REGISTRATION
